Gluten free pizza

Bob's red mill has gluten free pizza crust so why not...

This wasn't actually my first attempt.  I love pizza but even most gluten free crusts have a corn product in them, and I definitely don't like to do corn, so...

The first time, I think I was thinking the dough will level out like a cookie and it didn't.  I know very little about baking, so no surprise I got it wrong.

This time after mixing the ingredients (and again forgetting the proper way to add the yeast) the dough balls really didn't rise.  However, I still patted out two small pizzas with a much thinner crust -- as thin as I could get it.  I also sprayed cooking spray on the baking sheet.

The toppings were organic basil pasta sauce from a jar, lots of it -- make sure every inch of the dough it covered.  It can help mask some of the inadequacies of the dough.  We added some veggies (olives, onions, tomatoes) and some turkey pepperoni.  Then, top it with a ton of cheese.

Don't forget to add some oregano or basil on top of the cheese!

It was pretty darn good...or close enough for not having to leave my house nor have a reaction to corn product.

Used Bob's Red Mill -- GLUTEN FREE ALL PURPOSE BAKING FLOUR and XANTHAN GUM -- to make it Gluten Free.

Used Almond Milk instead of milk to make it lactose friendly.

Note:

Read the all recipe reviews on this one and consider baking powder not soda as well as more butter.  They cupcakes were edible but I wouldn't say great.

As usual, I also mixed things in the wrong order.  One of these days, I will get it right.

Christmas Brunch Casserole

Forgot to take picts both years.  Great to make ahead of time and to feed a large group.  Just pop into the oven for an hour before folks arrive.

Notes:

1.) Use gluten free flour instead of regular flour.
2.) Can add more eggs if you have more people.
3.) For a vegetarian option remove the sausage and use peppers and tomatoes instead.
4.) Use lactaid cottage cheese possibly instead of regular for lactose intolerant peeps

First made in 2013...In 2015, it seemed a bit heavy...not sure why.

Note for 2016 --
Remember to drain sausage or use turkey sausage or some other meat alternative.  Many of us have given up pork in our young/old age anyway.
Make sure top is good and brown.
Let sit overnight (to much pub crawling in 2015 and forgot).
Maybe regardless of using meet or not, add more veggies like peppers and tomatoes.
Might be good to try out with some chopped, steamed potatoes.

Ham and potato soup

This recipe is an after Christmas recipe when figuring out what to do with the left over ham..  My friend, Gretta, recently started making split pea soup with ham so I went on All Recipes and found this highly rated recipe since I had potatoes and ham.  


Beyond cubed ham (which I had plenty off) and red potatoes, I had some of a raw veggie tray left over, so I added green onions (4), celery, carrots, and a bit of Cauliflower - why not,  

For the broth, I don't use chicken bouillon cubes because they're an MSG, preservative nightmare.  Instead I used a box of organic veggie broth and the broth from the collard greens that was left over.  I added a couple glasses of water.  Then, I added some garlic salt, salt, pepper, celery salt, and parsley. 


I am lactose intolerant so I skipped the milk portion of the recipe.  Regardless, it still tasted pretty great.

I brought it to a boil and cooked the potatoes.  Once those were soft I reduced the heat, added those couple glasses of water and seasoning.  I did let it simmer for an hour or two after cooking until the potatoes were falling apart and I thought the seasonings had melded together.

Alternative to bouillon cubes -->

Veggie Chicken Broth Mix
1-1/2 c. nutritional yeast
3 T. onion powder
2-1/2 t. garlic powder
1 T. salt
1 t. celery seed
2-1/2 T. Italian Seasoning
2 T. dry parsley

Applesauce -- so easy, why do we buy it?




4 granny smith apples
3/4 cup of water
1/4 cup of sugar
1/2-1 tsp cinnamon

Peel, core, and slice or chop 4 granny smith apples

Smashed Plantains, Engine No 3 inspired



Sometimes called fired plantains or tostones, Engine No 3 in Milwaukee serves these with cilantro rice and beans (see other blog post) along with eggs.  They make for the most awesome breakfast.  It is great for vegetarians, or I love mine with a side of chorizo.

Smart balance cooking oil
1 or more plantains
Garlic power


1 plantain, peel

Chop it in 1 inch pieces
Turn oil on high (till a drop of water makes it sizzle)
Add plantains for 5 minutes
Remove and place on wax paper
Cover with wax paper and smash with a mallet into 1/4 inch mini pancakes
Place back into the oil for a few more minutes
Remove and place on paper towel to absorb excess oil

(Chicken) noodle soup, Gluten free and quick!



1 cup of chopped celery
1/2 cup of onion
1 cup of chopped carrots
1 tsp basil
1 tablespoon of parsley (or oregano or cilantro depending)
1 can chicken broth
1 can of veggie broth
1 box of Thai Kitchen thin noodles
1 chicken breast

Put olive oil in a soup pan
Add veggies, cook until onions are translucent
Optional: Add chopped chicken breast meat
Add broths and seasoning
Bring to a boil
Add 1/2 box of Thai Kitchen noodles
Cover, remove from heat, and let simmer for 5 minutes
Serve

Note, not all broths are equal.  Look for something that is organic with no preservatives or natural preservatives.  Also, watch the sodium.

Cilantro rice, Costa Rican inspired


















Olive oil
1 cup or more of fresh cilantro
1 cup of diced onions
1 teaspoon of chopped garlic
1/2 cup of diced peppers (or yellow peppers)
1 16 oz can of chicken broth (or veggies broth)
1 teaspoon of cilantro
1 teaspoon of coriander
2 cups of uncooked brown (or white) minute rice.

Directions:

In a large frying pan, turn heat on medium and add olive oil.

Put cilantro, onions, garlic, and peppers into the pan and cook until onions are clear (add a little chicken broth to prevent any burning or turn down heat).

Add a can of chicken broth.

Add uncooked rice.  Stir it in completely.

Bring to a boil (turn on higher heat) then turn to low.

Cover and let stand 10 minutes or so until rice is edible.

Sweet potato casserole - gluten free, lactose free


Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.

Bake sweet potatoes 35 minutes in the preheated oven, or until they begin to soften. Cool slightly, peel, and mash.

Peeling is not fun

In a large bowl, mix the mashed sweet potatoes, salt, 1/4 cup butter, eggs, vanilla extract, cinnamon, sugar, and almond mile (or heavy cream). Transfer to the prepared baking dish.

In a medium bowl, combine 1/4 cup butter, brown rice flour, organic brown sugar, and chopped pecans. Mix with your fingers to the consistency of course meal.

Sprinkle over the sweet potato mixture.

Bake 30 minutes in the preheated oven, until topping is crisp and lightly browned.

5-8 sweet potatoes
1/4 teaspoon salt
1/4 cup butter
2 eggs

1/2 teaspoon ground cinnamon
1/2 cup organic cane sugar (white)
2 tablespoons of almond milk (or heavy cream)
1/4 cup butter, softened
3 tablespoons brown rice flour
3/4 cup packed organic light brown sugar

Gluten free apple pie

I don't bake.  This is probably my first baking success.  However, I bought the gluten free crust at Whole Foods, Wholly wholesome GF crust.  Sorry, I wasn't able to take better picts.  However, apple pie is THAT easy. The hardest part is peeling the apples.



Apple pie stuffing

 1 recipe pastry for a 9 inch double crust pie (gluten free crusts are available)

 5 Granny Smith apples - peeled, cored and sliced



1/2 cup unsalted butter

1/2 cup white sugar (organic cane sugar)

1 teaspoon ground cinnamon

? 1/4 cup water or remove


Topping:

1/4 cup of unsalted buttter

3 tablespoons brown rice or gabanzo bean  flour

1 cup chopped walnutes

1/2 cup packed brown sugar



Directions

Preheat oven to 425 degrees F (220 degrees C).

Place the bottom crust in your pan. Fill with apples, mounded.

Mix 1/2 cup of melted butter, 1/2 cup of white sugar, and cinnamon.  Pour over apples.

Mix 1/4 cup of butter, 1/2 cup of brown sugar, 3 tablespoons of brown rice flour or gabanzo bean flour, and 1 cup of chopped walnuts.  Crumble on top of pie.

Bake 15 minutes in the preheated oven.

Then, reduce the temperature to 350 degrees F (175 degrees C).

Continue baking for 35 to 45 minutes, until apples are soft.

Gluten free fish fry



1 cup of chickpea/garbanzo bean flour
1/4 cup of rice flour
1 egg
1 cup of water
1/4 tsp baking soda
1/4 tsp Cayenne
1 tblspn Paprika
1 tsp Salt
1 tsp Pepper
1 tsp garlic powder

Heat container of canola oil to 190 degrees.  I think I used some smarter balance oil that said it was healthier.

Mix dry ingredients,  mix egg, then mix together and add water.  Should be like a paste almost.

Dip the cod, shrimp (cleaned and peeled), and calamari (cleaned and cut).

Slowly drop into the oil in the pot.  The shrimp and calamari only take a few minutes.  Leave the cod in for about 7-8 minutes.

Remove and place on paper towel.  Sprinkle with parsley or cilantro.

Serve with Sriracha, Sriracha mayo,  or with tarter sauce (mayo, sweet relish, lemon, salt and pepper).

Tanya's Slow Cooker Cajun Red Beans and Dirty Rice

3 cans of beans or 1 pound dry kidney beans

 1/4 cup olive oil
 1 large onion, chopped
 1 green bell pepper, chopped
 1 tablespoons minced garlic
 2 stalks celery, chopped

2 bay leaves
1/2 teaspoon cayenne pepper
1 teaspoon dried thyme
1/4-1 tsp teaspoon dried sage (out)
1 tablespoon dried parsley
1 teaspoons salt

Optional:
1 teaspoon Cajun seasoning (see recipe below or just add some paprika, oregano, red pepper flakes, etc to your recipe)
1 tablespoon firmly packed light brown sugar or 1/2 tsp molasses and 1/2tsp stevia
1 teaspoon hot sauce, such as Tabasco or sriracha
1 teaspoon cracked black peppercorns
1 can of chilles

6+ cups chicken broth or water

1/2 pound andouille sausage (3 links), sliced (Whole Foods has turkey andouille)
1/2 pound of ground beef

1/2 pound of shrimp
1/2 grilled chicken


In a skillet, heat oil over medium heat. Cook onion, bell pepper, garlic, and celery in olive oil for 3 to 4 minutes.

Rinse beans, and transfer to a large pot with 4 cups chicken broth. (Note, if you use dry beans they needed to soak over night and add a simmer for 2 1/2 hours before adding sausage).

Stir cooked vegetables into beans.

Season with bay leaves, cayenne pepper, thyme, sage, parsley, and Cajun seasoning. Bring to a boil, and then reduce heat to medium-low.

Meat -->

Add sausage, and cook until browned, 8 to 10 minutes. 

Stir cooked sausage into beans and vegetables.

Add beef, and cook until browned, 8 to 10 minutes. 


Stir cooked beef into beans, veggies, and sausage.

Rice -->

Add 2 cups of brown rice

Boil and simmer -->

Bring to a boil, and then reduce heat to medium-low. Simmer for 2 1/2 hours.

Add broth as needed until rice is cooked.  Next time, I might add cooked rice or have the rice separate.  It ended up taking about 6 hours total for the rice to get soft.  Plenty more broth than I thought.

*Option, cook rice separately. Meanwhile, prepare the rice. In a saucepan, bring water and rice to a boil. Reduce heat, cover, and simmer for 20 minutes. Serve beans over steamed white rice.

Gluten Free Fudgy Molasses Brownies - Crosby's Molasses

To try -- shopping list...

1 cup dark chocolate chips or coarsely chopped bittersweet chocolate

½ cup butter, cut into pieces

1/4 cup Crosby’s Fancy Molasses

2 large eggs

1 cup sugar (can be reduced to 2/3 cup)

1 teaspoon vanilla extract

1/2 teaspoon xanthan gum

2 Tbsp. unsweetened cocoa powder

1/4 teaspoon fine salt

1/2 tsp. baking powder

1 cup brown rice flour

Slow Cooker Sauerkraut and Sausage Recipe



Original recipe makes 4 to 6 servings



1 (20 ounce) can sauerkraut

1/4 cup of sugar and 1-2 tblsps of molasses OR 1/4 cup brown sugar

1 1/2 pounds ground pork sausages

1 onion, sliced



Combine the sauerkraut and brown sugar in the slow cooker. Arrange the sausage and sliced onion over the sauerkraut.



Cook on high for two hours, check for dryness, adding some water if necessary, then reduce to low setting, and cook on low for two more hours.
